Martha's Wacky Cake

Wacky Cake is an old, classic recipe (It's even got its own Wikipedia entry http://en.wikipedia.org/wiki/Wacky_cake) - But here it is as cupcakes.

I'd take a cake over a cupcake any day, but there is some major cupcake porn at the end of this clip that made me a believer. It doesn't even have frosting on it but it's just such a moist, spongy, perfect lil piece of chocolate cake... Thank you, Martha. Thank you.

Throw some chocolate chips in there for Costco-style double chocolate muffins. And eat 'em for breakfast. Because muffins.

Or a lot of store-bought frostings are accidentally vegan..

But you could make Mayim Bialik's simple chocolate one..

Or how about a vanilla avocado icing? Yes you can!

The most sincere thank you to Lori Sandler of Divvies Bakery and Martha Stewart for having kids in the kitchen and baking 'em allergy-friendly treats!

Rachael's Eggplant Schnitzel

Vegan cooking will make you realize how many of the tastes & flavors you've loved actually come from everything but the meat. I once had a slice of tofu prepared like schnitzel and it even had the same mouthfeel as the veal schnitzel I'd had as a kid.

Can we talk about how eggplant is underrated!? It can be thick and creamy, or chewy and meaty, or thin and crisp. It's endless.

The most sincere thank you to Rachael Ray, Scripps & her incredibly clever team for some of the most creative and healthy recipes in food television.

Kathie & Hoda's Chocolate Cake & Vanilla Frosting

Accidentally vegan boxed cake mix is one of life's simple pleasures. Could baking get any simpler?!
Here it is with BLACK BEANS. Health! Fiber! Dark gooey deliciousness!

For the icing we have creamy, fatty (the good kind) avocado - thick and vanilla. Joy's detailed recipe is on her website

A sincere thank you to NBC's Today Show for these always clever, outside-the-box recipes.

Rachael's Kuri Curry

Food television at its best. Use ingredients we are hesitant to try cooking (Kuri, that's you, I'm sorry). Then make a healthy, easy-to-follow dish using a lot of ingredients we know how to handle (canned tomatoes, I'm lookin at you).
Bonus geniusness of roasting squash in the oven separately so that you get some caramelization and crunchy edges on there. Yes! Yes!
The most sincere thank you to Rachael Ray & her team, Scripps & Cooking Channel for this solid example of vegan-friendly food tv perfection.
