Martha & Shira's Lemon Squares

This dessert is healthier than a lot of salads. Silken tofu is such a versatile, thick, creamy and protein-packed ingredient. Wish it was used more, a lot of foods could be accidentally vegan and allergy-friendly... Like these lemon squares!
The most heartfelt thank you to the talent behind Martha's Eat Clean series, and especially the always effervescent Shira Bocar.

Bobby's Creamy Thai Salad

I finally realized who Bobby Deen reminds me of. Kenny Powers. As if I couldn't love him any more...
This dish is sweet & spicy with textures galore. Veganizing honey in any recipe is super easy! Try maple syrup, agave or even corn syrup.
Sincerest thank you to the Deens, Scripps & Food Network for the healthy and important education that is this Not My Mama's Meals clip.

This is way too inexpensive and easy and delicious to be real. This may be a dream. Pinch a vegan.

Lemon Meringue Cookie Pie

These Snack Packs are accidentally vegan lemon meringue pie bliss.
Then I discovered these no-name, cheap as eff, accidentally vegan coconut shortbread cookies.
Then I dipped.
This is Lemon Meringue Pie in your mouth, guys.
Hi Dunkaroos Kangaroo! Take note. You're welcome.

Trader Joe's Ice Cream

I'm usually (always) neurotic about rushing home with frozen foodstuffs so if you're like me take comfort in this: the best texture was when this guy had been in the car and softened up significantly.
So creamy, light, almost fluffy? Unreal! Coconut Milk & Trader Joe's for life.

Trisha's Ambrosia

This may be a Southern show, but there's something about a bowl of shredded apples that screams Passover... here is a Dairy free, Gluten free, Egg free, Nut free, Allergy sensitive dessert straight from the South. Betty Maxwell was so ahead of her time, no wonder Trisha's Dad dug it. Man's got good taste.
Thanks to Food Network, BJ Flanagan & Scripps for bringing us a quick, tropical southern treat everyone can eat. Unless you don't like fruit. Then we can't help you.
