Martha's Wacky Cake



Wacky Cake is an old, classic recipe (It's even got its own Wikipedia entry http://en.wikipedia.org/wiki/Wacky_cake) - But here it is as cupcakes.

I'd take a cake over a cupcake any day, but there is some major cupcake porn at the end of this clip that made me a believer. It doesn't even have frosting on it but it's just such a moist, spongy, perfect lil piece of chocolate cake... Thank you, Martha. Thank you.

Throw some chocolate chips in there for Costco-style double chocolate muffins. And eat 'em for breakfast. Because muffins.

Or a lot of store-bought frostings are accidentally vegan..

But you could make Mayim Bialik's simple chocolate one..

How about a 4-ingredient CAKE that's dairy free, egg free and fat free, using only ONE pan?
Behold Cathy Mitchell, cookbook author of Dump Cakes, to make it happen for us.
Use any flavor soda, any flavor cake mix she says. Oh, I will. The dessert possibilities are endless. (A ton of prepared cake box mixes are accidentally vegan, just read through those ingredients!)
How much does Cathy's laugh make you miss her better half from those grill infomercials? That dude with glasses? Love him.

p.s. Cover with foil and bake 20 minutes. Remove foil and bake an additional 30 to 40 minutes or until cake is set. Cool 15 minutes.

This baby was very light, fluffy, airy and not too sweet at all. It's made with rye flour and love. Oh and fascinating ingredients like "candied" and "burned" sugars. AMAZING.
