Rachael & Gwyneth's Muffins
Gwyneth Paltrow MAKES MUFFINS.
Of course they're gluten free. And vegan. Bless her.
(In case you don't love Rachael enough already, just listen to her swoon for Almond Milk. Love!)
And, uhm... how lovely to hear Gwyneth talk just like us? "Uhm.... AMAZING. Uhm. 5-Spice. AMAZING. Smells AMAZING." Yay!
The most amazing sincere thank you to Gwyneth Paltrow for her allergy-friendly recipe, Rachael Ray and her genius team for bringing it all to us.

Rachael's Chili & Green Rice
Another chili recipe. Because beer and smoky peppers. And toppings for days (lime juice! raw onion! scallions! chips!)
But I think the cleverest element of this dish is that rice. The spinach cilantro blend adds flavor deliciousness, green healthiness PLUS heft and bulk - without the carbs.
I can't thank Rachael Ray and her team enough. They sincerely makes some of the most inventive recipes in food television. And thank you to Cooking Channel & Scripps for bringing it to us!
p.s. Ina Garten's Guacamole on top - can you imagine?

Rachael's Eggplant Schnitzel
Vegan cooking will make you realize how many of the tastes & flavors you've loved actually come from everything but the meat. I once had a slice of tofu prepared like schnitzel and it even had the same mouthfeel as the veal schnitzel I'd had as a kid.
Can we talk about how eggplant is underrated!? It can be thick and creamy, or chewy and meaty, or thin and crisp. It's endless.
The most sincere thank you to Rachael Ray, Scripps & her incredibly clever team for some of the most creative and healthy recipes in food television.

Rachael's Kuri Curry
Food television at its best. Use ingredients we are hesitant to try cooking (Kuri, that's you, I'm sorry). Then make a healthy, easy-to-follow dish using a lot of ingredients we know how to handle (canned tomatoes, I'm lookin at you).
Bonus geniusness of roasting squash in the oven separately so that you get some caramelization and crunchy edges on there. Yes! Yes!
The most sincere thank you to Rachael Ray & her team, Scripps & Cooking Channel for this solid example of vegan-friendly food tv perfection.

Rachael & Andy's Mint Cookies
This confirms it, guys. It is impossible to melt a batch of semi-sweet chocolate chips without stealing -ahem- tasting a couple. Handfuls. A couple handfuls.
Also how lovely that the lead-in is talking about how rescuing dogs & animals is the best? These two. So thoroughly enjoyable.
Enjoy your thin mints, courtesy the perfectly easy, simple, creative Rachael Ray Show. And her crew. Who made those perfect ones they were eatin. Bravo.

Rachael's Roasted Broccoli
Love that Rachael Ray uses "Grill Seasoning" on her broccoli! YES.
Try using the sauces, marinades and spices you've loved on meat in vegan dishes: grains, tofu, beans, vegetables.. It'll scare you how similar they can taste.
The most sincere thank you to Rachael Ray, Food Network & Scripps for showing us around those folate-rich stems!

Rachael's Quinoa Peppers
Rachael Ray teaches us how to cook quinoa with her adorable mug as a measuring vessel. Maximum loveliness.
Did you know 1 cup dry quinoa yields 4 cups cooked!? Do you also just wanna throw some olives in there? Ya, me too. Maybe even raisins and nuts.. I swear I can see the olives in her finished peppers.. A food-wish hallucination. Thanks so much to Scripps & Food Network for the culinary class that is Rachael Ray!

Rachael's Pumpkin Pasta
Not only is canned pumpkin creamy, it creates a sauce reminiscent of those fluorescent orange macaroni & cheese powder packets?!
Pumpkin, where have you been all our lives.
(I love how Rachael Ray talks about the whole wheat penne having protein. It's true, there's protein just about everywhere. Let the cows keep theirs, amirite.)
A huge thank you to Food Network, Scripps & Rachael Ray for all the glorious work they put into 30 Minute Meals.

Rachael & Avril's Cookies
The method for this cookie reminds me of Rice Krispie Squares.
Who needs marshmallow? Nobody. Who wants chocolate? ERRYBODY.
Can we talk about how great these are in terms of being allergy aware? If you're lactose intolerant, or have an allergy to eggs? VERY. Very great.
Thank you to the Rachael Ray Show for lettin Avril in the kitchen. We love.

Rachael's Kale & Mushrooms
Rachael Ray. What a pro. Watch her burn herself and not miss a beat, then use kale like it's nbd 300 years before anyone knew what it was.
How to smother your vegetables and properly cook a mushroom (no salt!) in a quick lil 3 minute video.
Thank you to Food Network & Scripps for sharing with us the joy that is Rachael Ray!

Rachael & Robin's Mushroom Soup
The BEST cream of mushroom soup Rachael Ray has ever had. The fennel seeds and coriander are brilliant, she says. We love you, we say. Robin Quivers, thank you. Thank you.
And a huge thank you to The Rachael Ray Show & KWP Studios for bringing us unique recipes like this one!

Rachael's Chocolate Cupcakes
A sincere thank you to The Rachael Ray Show for the classiness, loveliness and info-fullness it brings to daytime tv.
The easiest chocolate cupcake recipe: if these two can do it, you can too! (No seriously. They both don't bake).
p.s. The frosting is made of tofu, so it not only is packed with protein, but it won't melt in the sun (this is why Rachael has a show: she smart).
You can find Mayim Bialik's vegan cupcake recipe here: Fudge Cupcakes
p.p.s. Many semi-sweet chocolate chips are accidentally vegan, especially store brands.

Rachael & Hungry Girl's Cake
Lisa Lillien makes 2 food swaps that save fat and calories while adding fiber AND deliciousness. No magic necessary and they are both accidentally vegan!
Did I mention cake.
