Mario's Squash Liver



Kabocha Squash is my absolute favorite. It's so rich and creamy (roasted with a spritz of oil and s&p)... So I can't even begin to imagine what level of culinary joy Mario's dish would take you to. This is Squash Porn to the max. Enjoy.

Rachael's Kuri Curry

Food television at its best. Use ingredients we are hesitant to try cooking (Kuri, that's you, I'm sorry). Then make a healthy, easy-to-follow dish using a lot of ingredients we know how to handle (canned tomatoes, I'm lookin at you).
Bonus geniusness of roasting squash in the oven separately so that you get some caramelization and crunchy edges on there. Yes! Yes!

Kelsey's Fall Soup



Rosemary! Thyme! Butternut Squash! Sweet Potato! Zucchini! "Fall in a Bowl!" she says.
"Don't mind if I do" I think, "Fall. Right. In."
Try replacing the orzo with quinoa for extra deliciousness, and cliché health food-ness. Bonus: quinoa has protein. Take that, cold & flu season! It's also gluten free. Take that, gluten!
