Martha & Shira's Lemon Squares



This dessert is healthier than a lot of salads. Silken tofu is such a versatile, thick, creamy and protein-packed ingredient. Wish it was used more, a lot of foods could be accidentally vegan and allergy-friendly... Like these lemon squares!

Rachael's Eggplant Schnitzel



Vegan cooking will make you realize how many of the tastes & flavors you've loved actually come from everything but the meat. I once had a slice of tofu prepared like schnitzel and it even had the same mouthfeel as the veal schnitzel I'd had as a kid.

Can we talk about how eggplant is underrated!? It can be thick and creamy, or chewy and meaty, or thin and crisp. It's endless.

Boiled Peanuts are underrated.

Lemon Meringue Pie

You remember exactly what that best, delicious, middle part tastes like right? This is it. In a cup. One day I will scoop it into a pie shell and cry with so much joy. Thanks to Hunt's for leaving the milk outta this Snack Pack.
