Melissa's Mustard Pecan Beans
For a side dish, I usually just open a can of green beans. This takes about 2x the effort for 20x the classiness and deliciousness. Thank you Melissa d'Arabian, thank you. Bonus protein and crunch from the buttery pecans. (I always toast those babes before using them, do you?)

Rachael's Chili & Green Rice
Another chili recipe. Because beer and smoky peppers. And toppings for days (lime juice! raw onion! scallions! chips!)
But I think the cleverest element of this dish is that rice. The spinach cilantro blend adds flavor deliciousness, green healthiness PLUS heft and bulk - without the carbs.
I can't thank Rachael Ray and her team enough. They sincerely makes some of the most inventive recipes in food television. And thank you to Cooking Channel & Scripps for bringing it to us!

Trisha's Thai Salad
Just try and watch this clip without immediately making a salad. It's impossible. (I had to.. and I never make 'em.)
Sure the dressing ingredients are similar to cake (you'll see) - but at least everything else is literally just vegetables and legumes. All good!
