Rachael's Chili & Green Rice
Another chili recipe. Because beer and smoky peppers. And toppings for days (lime juice! raw onion! scallions! chips!)
But I think the cleverest element of this dish is that rice. The spinach cilantro blend adds flavor deliciousness, green healthiness PLUS heft and bulk - without the carbs.
I can't thank Rachael Ray and her team enough. They sincerely makes some of the most inventive recipes in food television. And thank you to Cooking Channel & Scripps for bringing it to us!

Rachael's Kuri Curry
Food television at its best. Use ingredients we are hesitant to try cooking (Kuri, that's you, I'm sorry). Then make a healthy, easy-to-follow dish using a lot of ingredients we know how to handle (canned tomatoes, I'm lookin at you).
Bonus geniusness of roasting squash in the oven separately so that you get some caramelization and crunchy edges on there. Yes! Yes!

Quaker's Crispy Minis

This was a quick vegan fix to a buncha Chicago Mix popcorn porn I stumbled across on the internets.
Both of these flavors are accidentally vegan: The slightly spicy, powdery Sweet Chili together with the crunchy, smoothly glazed Caramel Kettle Corn make a beautiful sweet & savory treat for your mouth.

Michael Symon's Risotto
Did you know the total cook time for risotto is about 18 minutes?
Do you want to see Clinton Kelly play the part of Grandma Symon?
Most importantly, the Symon family risotto: No butter, no cream. "It gets creamy because of the process" Seriously, Chef Symon mentions it twice! "You don't need butter or cream to make it creamy and delicious. It happens because of the technique."
Mario Batali & Michael Symon commiserate: nothing worse than a restaurant finishing off their risotto with a whole buncha cream/butter.
