Rachael's Eggplant Schnitzel
Vegan cooking will make you realize how many of the tastes & flavors you've loved actually come from everything but the meat. I once had a slice of tofu prepared like schnitzel and it even had the same mouthfeel as the veal schnitzel I'd had as a kid.
Can we talk about how eggplant is underrated!? It can be thick and creamy, or chewy and meaty, or thin and crisp. It's endless.

Rachael's Kuri Curry
Food television at its best. Use ingredients we are hesitant to try cooking (Kuri, that's you, I'm sorry). Then make a healthy, easy-to-follow dish using a lot of ingredients we know how to handle (canned tomatoes, I'm lookin at you).
Bonus geniusness of roasting squash in the oven separately so that you get some caramelization and crunchy edges on there. Yes! Yes!

Rachael's Quinoa Peppers
Rachael Ray teaches us how to cook quinoa with her adorable mug as a measuring vessel. Maximum loveliness.
Did you know 1 cup dry quinoa yields 4 cups cooked!? Do you also just wanna throw some olives in there? Ya, me too. Maybe even raisins and nuts..
